Paneer Bread Canapé Rolls
Ingredients: 100gm Paneer, crumbled, 4Slices bread (a day old) ½tsp salt; ¼tsp black pepper; ¼tsp red chili pepper; ¼tsp Anardana powder ½ green chili chopped ¼tsp chopped onion A few chopped green coriander leaves Method; 1. Mix the paneer with all the ingredients except bread slices. Mix well to form the filling. Divide the mixture in 4 parts. 2. Soak the bread slices in a little water. 3. Take one bread slice put one part of the filling in the center of the soaked bread. Close the sides of the bread to form a roll shaped canapé. 4. Make the other 3 canapé roles in the same way. 5. Deep fry the rolls in the hot oil to light brown and crispy. Serve hot with curd mint chutney.

Chocolate, Walnut Mocha Cake Ingredient: To make coffee cake, add 2tsp instant coffee to the flour- (with curd) or with milk maid. For Icing: 200gm (1C heaped) white butter or use whipped cream chilled 2tbsp icing sugar, sieved (if using whipped cream you do not need sugar) 2tsp cocoa powder 1tsp instant coffee powder (depending on how strong a coffee flavor and taste you like) ½tsp vanilla essence ¾ - 1C walnuts-very finely chopped Chocolate wafers for decoration Method: 1. Bake the cake to get a 5” x 7” rectangle cake. Add 2tsp instant coffee to the flour to get coffee flavored cake for the recipe. Cool cake completely before icing 2. Cut the cake horizontally into 2. 3. Beat butter until soft and creamy. Add cocoa, coffee, vanilla essence and beat till smooth. 4. Sift icing sugar. Add to the cream gradually, mixing gently until you reach the desired right sweetness. 5. Keep a few walnuts aside and chop the rest of them to small pieces. Mix the walnut pieces to the chilled whipping cream with 1½tbsp icing sugar and ½tsp vanilla essence. Mix well gently. 6. Put ½ of the prepared cream on one half of the cake and put the other half on top of it. Spread the other half of the prepared walnut cream over the cake to cover it. 7. Sprinkle ½tbsp icing sugar over the cake. Then decorate with the chocolate wafers and the full-half walnuts.
